Research and funding

  • Diverse mechanisms of pectic polysaccharide degradation involved in the softening of ripening fruits in vivo.

    I am interested in the degradation of pectic polysaccharides in the primary cell wall, which causes the softness of the ripening fruits. The project focuses on three proposed mechanisms that might cause the degradation of pectin during the ripening process, two of which are the enzymatic attack by endo-polygalacturonase (EPG) and pectate lyase (PL).The third mechanism is a non-enzymatic attack by the hydroxyl free radicals ( ͘OH).
