The turnover of vitamin C in harvested salad tissues
: Plants are an important source of vitamin C (consisting of
ascorbate and dehydroascorbic acid), which is an essential part
of the human diet. This research aims to investigate the biochemical
degradation pathway of vitamin C in plants.
